Mini Paneer Tikka Sliders Recipe: The Perfect Tea Party Snack

Ingredients
  

  • For the Paneer Tikka:
  • 250 g Paneer Cut into 1-inch squares
  • 1/2 cup Thick Curd Hung curd is best
  • 1 tbsp Ginger-Garlic paste
  • 1 tsp Kashmiri Red Chili Powder for that bright red color
  • 1/2 tsp Garam Masala & 1/2 tsp Chaat Masala
  • 1 tsp Kasuri Methi crushed
  • 1 tbsp Mustard Oil for authentic smoky flavor
  • For the Sliders:
  • 12 Mini Slider Buns or small dinner rolls/pav
  • 1 small Red Onion sliced into thin rings
  • 1/2 cup Mint-Mayo Mix 2 tbsp Green Chutney with 1/4 cup Mayonnaise
  • Butter for toasting

Method
 

  1. Marinate: In a bowl, whisk curd, mustard oil, and all spices. Add paneer cubes and coat well. Let it rest for at least 30 minutes.
  2. Sear: Heat a non-stick pan or grill pan. Sear the paneer cubes on medium-high heat for 2 minutes on each side until you see golden-brown char marks.
  3. Prep the Buns: Slice the mini buns in half. Apply a little butter and toast them on the pan until light gold.
  4. Assemble: * Spread a generous layer of Mint-Mayo on the bottom bun.
  5. Place one Paneer Tikka cube on top.
  6. Add a fresh onion ring and a sprig of cilantro.
  7. Close with the top bun and secure it with a fancy bamboo skewer or toothpick.
  8. Serve: Arrange them on a platter with extra green chutney on the side.

Chef’s Notes 

  • The "Slider" Look: To keep it looking like a "High Tea" snack, ensure the paneer cube is roughly the same size as the bun. Trimming the edges makes it look "neat" and professional.
  • Smoky Flavor Hack: If you don't have a tandoor, you can do the "Dhungar" method (placing a hot piece of charcoal in the marinade bowl with a drop of ghee and covering it) to get that restaurant-style smoky smell.
  • Veggie Crunch: For extra texture and color (very Pinterest-friendly), add a small leaf of butter lettuce or a thin slice of bell pepper inside the slider.
